When the days are warm and little legs have been busy running, jumping and exploring outdoors, there’s nothing quite like a deliciously cold treat to help everyone cool down.
And if you’re looking for a pudding that’s guaranteed to cause a little bit of excitement, look no further than the classic Knickerbocker Glory. We’ve teamed up with our friends at Jude’s, the ice cream experts, to bring you a wonderfully simple recipe that’s just the ticket for sunny afternoons, garden parties and family celebrations.
A sundae full of summer joy
There’s something wonderfully nostalgic about a Knickerbocker Glory. Tall glasses piled high with scoops of creamy ice cream, juicy strawberries, fluffy marshmallows and a generous drizzle of fruity coulis — what’s not to love? This unashamedly retro dessert has been making children’s eyes light up for generations. And the beauty of making your own is that there are no complicated ingredients or fancy techniques involved. Just layer, scoop, drizzle and decorate!
It’s also the perfect recipe for little helpers. Get the children involved by letting them add the strawberries, drop in the marshmallows and carefully build their own towering sundaes. There may be a little mess involved, but that’s all part of the fun.
Knickerbocker Glory recipe
Makes 2 sundaes
Ingredients

6 large strawberries — 4 hulled and halved, plus 2 whole for decorating

2 tablespoons of Jude’s strawberry coulis

6 scoops of Jude’s vanilla clotted cream ice cream

6 large marshmallows

2 fan wafers
Method
1. Start with the strawberries
Place two strawberry halves into the bottom of each sundae glass. This gives you a lovely fruity layer to discover underneath all that delicious ice cream.
2. Add a drizzle
Pour a little strawberry coulis over the strawberries. Don’t worry about being too neat — a few drips down the side only add to the fun!
3. Scoop in the ice cream
Add one generous scoop of vanilla clotted cream ice cream to each glass.
4. Bring on the marshmallows
Pop a large marshmallow on top. This is a particularly important job for little helpers — although you may need to keep an eye on how many mysteriously disappear before they make it into the sundae!
5. Keep layering
Repeat the layers of strawberry, coulis, ice cream and marshmallow until you reach the top of the glass.
6. Make it magnificent
Finish with a whole strawberry perched proudly on top, followed by a fan wafer for that all-important Knickerbocker Glory flourish.
7. Eat immediately!
Grab a spoon and tuck in before the ice cream melts. Extra napkins are very much recommended.
Let little chefs take over
The best thing about this recipe is that children can help with almost every part of it. Older children can help prepare the strawberries, while younger ones can take charge of adding marshmallows and creating the layers. You could even set out a selection of extra toppings and let everyone design their own sundae. Think fresh berries, sliced banana, sprinkles or whatever else you have lurking in the kitchen. Just remember: the taller and more extravagant the sundae, the better!
