5 Picnic Ideas for National Picnic Week

Summer is approaching and in celebration of National Picnic Week (17-25 June), what better time to pack up a delicious basket of treats, grab a blanket and head outside for a picnic with the whole family.

We’ve got plenty of inspiration for the perfect spots to picnic across the UK for your next family day out or staycation.
How you pack and serve your picnic can have a big impact on the environment. Try to avoid single-use paper and plastic plates, cups and cutlery. Get more tips on the planning the perfect plastic-free picnic here.

1) Quails Eggs

Perfect for picnics and packed full of protein, they make a handy bite-size snack.

2) Tortellini Skewers

Buy pre-made tortellini, cook and thread onto a skewer. Ideally drizzle with some fresh pesto or use it as a vehicle for dips.

3) Hummus Jam Jar Pots

Spoon some hummus into a jam jar, cut up some carrot, pepper or cucumber and place inside. Screw on the lid and you are ready for an instant, no mess picnic dipper.

4) Watermelon Lollies

Buy some watermelon and cut into slices. Cut a small slit into the skin of the watermelon and place a ice lolly stick inside. A healthy, fun lolly and so refreshing on a hot day!

5) Rainbow Wraps

Simply get a wholegrain wrap, spread hummus, goat’s cheese or any of your favourite dips down the centre of it and pile with a variety of fillings. Ideas include sweetcorn, grated carrot, beetroot, pepper, lettuce, etc. Wrap it up tight and either cut in half or into smaller bite-size pieces. This is a great way of getting lots of veg into your children in a fun way.

6) Green Chicken

Serves: 4
Cook two chicken breasts: either simply roast in the oven for 10-15 minutes, poach in some water for 10-15 minutes or use leftover chicken from a roast. Chop it into mouth-sized pieces and mix through our herby yoghurty sauce (recipe below).

7) Herby Yoghurt

This is a great sauce to have in your fridge to throw on pasta or dip pitta in. Herbs have fantastic health boosting properties and we encourage you to use them liberally in your cooking. Parsley, for example, is packed full of vitamin C. Yogurt is naturally rich in healthy good bacteria to support digestive and immune health.

Ingredients:

  • 3 tbsp natural yoghurt
  • 1 tsp lemon juice
  • 1 garlic clove, pasted
  • Large handful of parsley, mint and coriander (light herbs such as dill, tarragon, chervil would all work well)

Instructions:

  1. Place all ingredients in a small Magimix, or use a hand blender, to blitz everything together to get this incredibly vibrant sauce (will last in your fridge for 2-3 days).
  2. Mix this through your chicken and serve. Great with cold new potatoes.
