Healthy Snack Bar Recipe

These yummy snack bars are a perfect alternative for the sugary chocolate bars and biscuits. Pop them in your child's school bag for a healthy snack on-the-go. They're packed with goodness and are made with only a few healthy ingredients (nuts, seeds, fruit). Plus, they take only a few minutes to whip up. Ingredients: • 100g ground almonds • 50g nut butter (use whichever you prefer: cashew, hazelnut, peanut butter, etc) • 80-100g coconut oil • 130g honey • 150g mixed roasted nuts • 10g chia and poppy seeds • 50g raisins • 70g dried apricots • 50g dried cranberries • 70g puffed rice • 20g mixed seeds
Instructions: 1. Preheat the oven to 200C and roast the mixed nuts for 10-15 minutes until lightly golden. 2. Place the nut butter, ground almonds, coconut oil and honey into a saucepan and heat all together until melted. Once melted, add the other ingredients and mix well until covered. 3. Line a baking tray with silicone/non-stick greaseproof paper and pour in the mixture. Press it down firmly and place in the fridge to set. 4. When set, cut into bars and store in an airtight container, although we suspect they won't last long!
Notes: Something we also love to do - before you have cut them, melt some dark chocolate and cover them in a layer. Chill in the fridge and cut as above - takes them to another dimension. This recipe takes no time at all and is guaranteed to make everyone happy.
